Owner of the Ballymaloe Cookery School in Co Cork, Darina Allen is also a teacher, author and television presenter. Her latest book Forgotten Skills of Cooking covers everything from how to smoke your own food to keeping a few hens in the garden, plus a myriad of recipes that show you how to use your homemade produce to its best. Recipes include Darina's foolproof Soda Bread, and many good old fashioned cakes, stews and sausages.
