Sweet Chilli Cod with Noodles Recipe from Waitrose  

Need inspiration in the kitchen tonight, use some frozen cod to make a really easy Asian-inspired supper.

Ingredients:
4 frozen Waitrose Sustainably Sourced Icelandic Cod Fillets, defrosted
4 tbsp sweet chilli sauce
1 tbsp sesame oil
300g pack fresh essential Waitrose Vegetable Stir Fry
250g medium egg noodles
2 tbsp soy sauce

Method:
1 Preheat the oven to 200°C, gas mark 6. Place the cod fillets on a baking tray and pour over the sweet chilli sauce. Bake for 15 minutes.
2 Meanwhile, heat the sesame oil in a large frying pan and fry the stir-fry veg for 5-6 minutes.
3 Cook the noodles in boiling water for 4--5 minutes. Drain and add to the vegetables for the last minute of cooking time.
4 Stir in the soy sauce and pour over the excess chilli sauce from the fish. Serve the fish on top of the noodle stir-fry.
