Ham, Leek and Tarragon Risotto Recipe from Marks and Spencer 

Ingredients:
1 tbsp olive oil
2 large leeks, finely sliced
200g jar Terribly Clever Risotto Base Paste
250g risotto rice
125ml white wine (optional)
750ml hot chicken stock
100g frozen peas, defrosted
250g leftover cooked ham, torn into chunks
1 tbsp chopped fresh tarragon
30g Parmesan, finely grated

Method:

1) Heat the olive oil in a large frying pan. Add the leeks and cook gently for 10-12 minutes until softened. Stir in the Terribly Clever paste and cook for 2 minutes. Stir in the rice to coat, then cook for a further 2 minutes, stirring continuously.

2) Pour in the white wine (if using) and stir over a medium heat until absorbed. Gradually add the stock, a ladleful at a time, stirring constantly, allowing each ladleful to be absorbed before adding the next.

3) Once all the stock has been absorbed (this should take at least 15 minutes and the rice should be tender but still have a slight bite), season to taste. Add the peas, ham, tarragon and Parmesan and mix well. Serve immediately with extra cheese, if you like.
